Serrano peppers

We had a frost the other night, and it killed off the garden. There were still three dozen or so unripe peppers on my Serrano plants. This is the first time we’ve planted peppers, so I’m not sure what to do of them. What effect will their unripe condition have on them - stronger? Weaker? Inedible?

Peppers are edible from the moment they fruit up. Age just makes them mellower and smoother. Green serranos are just fine. I like to thin-slice them in stir-fry myself. Enjoy them - they will be tasty.

I’d go a step further and say you want your serranos green; while I’ve seen red jalapenos for sale in Mexican markets, I have yet to see a red serrano.

Another vote for eating them green. They’re good ripe, but there’s really no reason to wait.
