I like to make meatloaf in my crockpot. This past Monday morning, I set two crockpots on low, one with a meatloaf and one full of potatoes. A comfort food dinner was ready when we came home that evening. You can use any favorite meatloaf recipe, just form a loaf and set it in the pot.
Whole chicken rubbed with watever you have that goes good with chicken except salt.
Small jar of pimento stuffed olives.
Can of small black olives.
Some garlic cloves, crushed.
A few dried tomatoes.
Some prosciutto, cut into strips.
Some salami, cut into strips.
Half a can of chicken broth.
A little white wine.
Turn on crock before you go to work (or, before your favorite mid-morning religious service on a Sunday), chicken will be done when you come home from work (or, in-between games of your favorite afternoon religious services on a Sunday).
Serve over rice.
I make this in the summer. Buy the 1 inch thick chops. Doesn’t matter if they have bone. They can easily be picked out after its cooked.
I normally used dried onion flakes instead of fresh onion. either way is fine.
Sweet & Sour Pork Chops
4 pork chops
1/4 cup brown sugar
1/4 cup ketchup
2 tablespoons minced onion
1 tablespoon lemon juice
Directions
Heat a large skillet over high heat. Sear the pork chops until browned, 1 to 2 minutes per side. Transfer the pork chops to a slow cooker. Mix the brown sugar, ketchup, onion, and lemon juice in a bowl; spoon over the pork chops.
Cook on Low until the pork chops are very tender, 4 to 6 hours.

This Peanut Butter Pork dish is one of my very favorites for the crock pot. You can really use any smallish pork roast, not just tenderloins. It’s delicious, especially if you love peanut butter like I do.
