Shrimp - on the grill

Take some bacon and cut it in either halves or thirds depending on the size of your shrimp and/or the slices of bacon. Cook it about half way… this is the one and only time I will say that it is ok to cook bacon in the microwave if you want… just remember to only cook it half way. Wrap the half cooked bacon around the shrimp and put a bunch on a skewer (several skewers actually). Toss on the grill and keep an eye on them… they will over cook quickly. Serve with your favorite BBQ sauce drizzled over them. I’ve had these for the first time somewhere in the Caribbean and they are awesome. I’ve also done it sometimes adding seasonings to the shrimp first (Old Bay, Lemon Pepper, etc.) and they are always great.

I worked for an upscale Mexican restaurant in Dallas, TX were we served some amazing brochette shrimp. They would butterfly the shrimp, add a strip of cheese and a strip of jalapeno, close, sprinkle in fish spice, wrap in bacon, and grill. Awesome.

Oh. Just in case…do pronounce the t in brochette. Once in a blue moon a customer would correct me. This stuff is from Louisiana, they don’t know or care about proper French pronunciation.
