My family likes this one. It’s not good for you, but it’s very tasty and easy to make and goes well with ham. You can make it the day before and then reheat in the microwave before serving.
JIFFY CORN CASSEROLE
1 (8 oz) can whole kernel corn, drained (can also use defrosted frozen corn)
1 (8 oz) can cream style corn
1 (8 oz) sour cream
2 eggs, beaten
1 stick (1/2 cup) butter, melted
1 box Jiffy Corn Muffin Mix
Shredded cheese (optional)
Mix together all ingredients except for cheese, and pour into large, lightly oiled casserole dish. Bake at 350 degrees for 55 to 60 minutes, or until done in center. If using cheese, put desired amount on top and put back in oven for a few minutes to melt.
