Help me make dinner, Cafe Society.

I come here because the foodies are always good for suggestions. For Easter hubby purchased a 10 lb ham. There are four of us in our household and I think the limit of eating ham for dinner is just about 4 days. We have A LOT of ham left over. I’ve got Italian loaf bread on its first rise in the kitchen. Now what?

Not sure if this is relevant but the ham was glazed with peach preserves, Goulden’s spicy brown mustard and a few dashes of UV sriracha flavored vodka. A note about the vodka, my son purchased it because it was half priced, so super cheap. It smells and tastes like hot peppers. The thing is, nobody here drinks Bloody Mary’s so I’ve been adding it to dinner to use it. As a side question-- what other recipes can this be added to?

Any way, that’s what I have. Italian bread and glazed ham. There’s a George Foreman for paninis, various veggies for sammiches and side dishes and me, totally out of ideas.

Are you a fan of ham and potato casserole? Basically it’s scalloped potatoes with shredded cheese (I use cheddar and swiss), diced onions and diced ham. That’s what I’m planning to make for dinner tonight.

The rest of my ham will go to make split pea soup in the crockpot. Goodness I’m boring, now that I think of it. :o

And your ham glaze combination sounds awesome!

Split pea is next after we eat the majority of the meat left on the bone. P.S., I like to add a heaping tablespoon of glaze in my soup. For fun.

Ham and scalloped potatoes is awesome. Not for dinner necessarily, but ham and pickle salad is the balls for sandwiches. Ham, onion, sweet or dill pickles (I like sweet) all chopped together and bound with mayo.

Fried rice with ham.

Make scrambled eggs with green onions, mix in various mixed vegetables like peas, green beans, diced baby carrots, and corn. Add in cooked rice and a lot of finely chopped ham. Salt for flavor and a bit of black pepper and you’re good

Ham freezes well, so you don’t have to eat it all right away. Personally, I’d portion it out, freeze it, then use as needed over the next month or so.

But you can make ham salad, deviled ham, ham biscuits, the aforementioned fried rice, the also aforementioned ham and scalloped potatoes (my favorite!)…the list is endless.

As for the pepper vodka…I’m stumped. We use the stuff for pretty much only Bloody Marys.

Everything sounds tasty but ham biscuits jumps out at me. Ham and cheddar biscuits sounds yummy.

There’s a saying I’m too lazy to look up, but it’s something like “Eternity is a ham and two people.” Chop off the remaining meat loosely, freeze it, and use the bone to flavor pea, bean, potato, or broccoli-cheese soup. I did the broccoli thing tonight.

It should work in vodka sauce.

I know I probably missed tonight’s dinner, but navy bean (or any white bean) soup is simple and inexpensive, using just water or stock, dried beans, carrots, onions, and maybe celery, along with the ham you already have. I know people who won’t eat pea soup for visual reasons but love bean soup.
I have also been making hash a lot this winter. Dice the ham, and saute with some diced potatoes or sweet potatoes, onions, and any other leftovers- peppers are good, but lots of veggies will work.
And I agree on the vodka sauce idea. Sriracha vodka might add a little kick to it.
