I like to make peanut butter cracker sandwiches. Or cheese cracker sandwiches. With whole wheat crackers. They are both filling. Also, I love watermelon so I will cut some up, and bag it. Watermelon is good for you, and delicious.
Back when I used to drive across the country to visit relatives, I ate corn nuts to stay awake. Nobody can doze off while chewing on those things. I never eat while driving now, as I consider it to be dangerous as both a distraction and a choking hazard.
On long driving trips my sons and I must have jerky! And it must be a local brand (no commercial stuff) purchased from a gas stop in the middle of nowhere.
My son and I got a good chuckle from the last batch of jerky we bought. I can’t remember the name of the jerky but it came with a tooth pick.
Only one though. Not good when you have three people eating from the bag.
I used to just push the limits, like a lot of people do. I know there were long stretches in North Dakota that I don’t remember traversing. Now I either pull over or stop at rest areas frequently.
My Wife and I do a long drive about once a year it seems. My go to is beef jerky. Not sure how nutritious it is, but your hands stay clean and it keeps me happy.

Can pretty much make a decent meal of it and not stop for fast food.
I am rarely in the car long enough to need to snack while driving, but if I am, it’s usually almonds. I always have water in the car with me. When we go on long driving trips we try to make sure we get out of the car to eat so we stretch our legs. Even so, on trips like that we have all manner of snacks with us.
