I don’t do KD any more, we prefer to make cheezy spoo from scratch :smiley: I also like to sub in cauliflower for the mac, and occasionally Ill do the tofu atkins version [slice pressed firm tofu into french fry size strips, and use velveeta and a whole beaten egg to make the cheese sauce. Comes out tasting like the old school mac n cheese before they screwed with the flavor profile]

Yea, I think that’s a pretty important point. 'Round here, a popular accompaniment to a good, boxed, and doctored Macroni and Chee is smoked Kielbasa or Hot Dogs.
