I’ve eaten plenty and enjoyed many, but never made them. Now I want to. As far as I can tell from looking at recipes, methods basically sort out to the yeastless Vs the yeast-using. While I really admire the simplicity of the yeastless, I worry that they won’t have sufficient puff, which, to my taste, is an essential element of the final product. A second dichotomy seems to be butter Vs shortening.
Can anyone recommend an idiot-proof recipe for these?
Link no worky. Please share! Hell, every time I go back home, I make it a priority to visit the local Mexican place and scarf some sopapillas. So being able to make them myself would be sweet. And much cheaper than the plane fare.
Link worky but no recipe given, unless I missed it (?). She did however rattle off some of the key ingredients and yeast was not one of them. And she also said let the dough sit for 10 minutes before rolling, further convincing me that no yeast were harmed in the making of those sopapillas, as 10 minutes is not enough time to get them going. So, I’m going yeastless. In leiu of further guidance from the Doper pantheon, I think I’ll soldier on and try this recipe. (I have found the recipes at allrecipes.com to be generally good.)
My aunt brought me a kit from Albuquerque. It’s a box with a pouch of powder, just like you’d get for pancake mix, plus instructions. That’s pretty idiot-proof!
Yeah, I think like tortillas, it’s just plain dough. No yeast required. I’ll look at the ingredients on the box and get back to you on that.
In case anyone’s interested, the linked recipe worked flawlessly. I let the dough stand a few hours before frying. Simple and made great poofy tasty masterpieces.
