Every series, whether of books or movies, should be viewed/read in release order. If the creator wanted them to be seen in some other order, they would have been released in that order. Why was Phantom Menace not the first Star Wars movie? Because without seeing the others, there’s no reason to care about it.
And do try to get the original versions of the original movies. While most of the changes were small, none of them were for the better. In the Special Editions, you end up with nonsense like exterior windows edited into interior walls, lightsabres which inexplicably change color, and worse special effects than the original.
