To me, Wedge was there to represent all of the Rebels who were not part of the Luke-Leia-Han clique - those quiet, hard-working men and women who did all the dirty work while the knights, princesses and rogues got all the glory. They were but warriors of the working day, but, by the mass, their hearts are in the trim.

Wasn’t Wedge also the only pilot to survive flying alongside Luke in all three movies?

He didn’t fly alongside Luke in RotJ, but otherwise, yes - we see him flying in both Death Star attacks, plus the evacuation of Hoth.
