Corellia, Alderaan, and Dantooine are all supposed to be more climatologically diverse, but we don’t really get to see any of those planets onscreen.

They didn’t say specifically, but it was stated that it was after the new Jedi temple was destroyed. Assuming that Kylo Ren was the one who lead the attack, it probably wasn’t much more than ten years back, since he appeared to be an adult in the flashback Rey saw (again assuming she saw the fall of the new Jedi order).

Luke ran off in shame after his Jedi academy turned into a house of horrors; and Han and Leia’s son went bad because “he had too much Vader in him”.
Why not see it?
Luke is in self-imposed exile because the new Jedi order he was founding was destroyed when one of his pupils, presumably Han & Leia’s son, destroyed it. He appears to blame himself.
Han & Leia’s son, Ben, or Kylo Ren, was seduced to the dark side by the current leader of The First Order, Snoke. It appears Ren is having trouble staying evil, and he wants to turn to the light side, but is committed to the path he’s taken.
