In Indiana there is no law enforcing no carry signs so you actually aren’t automatically a criminal.
The article states that “IKEA … has a strict no weapons policy”, but it doesn’t say whether that store has any signage posted indicating that policy.
All that said, there is absolutely no excuse for being so incompetent as to lose a weapon that you choose to carry.
Given that just about any Google-fu will give you plenty of complaints from concealed and open carry advocates about IKEA’s general policy and signage, is that really the insinuation you want to make?
IANAL (thank God) but to enter private property when expressly prohibited (“No guns allowed”) should be trespassing, a misdemeanor or even felony in most (all?) states.
But perhaps the signage must be explicit: “Leave your gun behind or you will be prosecuted for trespassing” rather than just “No guns allowed” ?
It seems odd that Indiana has no respect for property rights of private individuals.

" for the reason that, “If asked to leave a property and you refuse to do so then you are breaking the law and put yourself at risk of being charged.” (It should also add in that, if you are stupid and obstinate enough to ignore the wishes of the property owners, then you are probably stupid enough to leave your gun behind in an IKEA couch for a kid to find.)
So, basically, what you are saying is that, if the private property owners don’t know that you are trespassing on their property by carrying a gun against their wishes, then you won’t get into any trouble. But, that’s true of any sort of trespass, or any sort of crime at all. Yeah, you can get away with crimes if you don’t get caught, that’s not unique to ignoring the wishes of private property owners in Indiana.
I ask you, if you were insistent upon ignoring the wishes of the private property owners that you are imposing upon, and they were to ask you to leave due to your disregard for the rules in place for their private property, would you try to make a deal out of it, and whine and complain that your rights are being “trampled upon”, or would you realize that you were you were the one in the wrong from the moment that you passed the “no guns” sign while carrying a gun, and apologize for your trespass and imposition?
Finally, due to your insistence that this guy was legally all in the right, do you feel that he should face any repercussions for his endangering of the public, or do you think that being separated from his gun for a few hours was punishment enough?
So if a store has a “No Guns Allowed”-sign and a gun nut goes in with a gun, can the security guard shoot him on the spot ?
If he does so, what are consequences for him, assuming the gun nut is white ?

I would wait until the guy looks like he his pulling out his wallet to pay for any shopping he did. Then shoot him because “I was scared”

Was their signage? Probably. Would I bet money one way or the other? No.
The fact that the video showed plenty of footage of the store front and the IKEA sign while not showing any clips of a no guns sign provides reasonable doubt.
And the impossible has happened again. Woman goes into Walmart, drops her gun, gun goes off. The responsible gun owner suffered minor injuries. No one else was injured.
What about the gun? Is it ok?
