I wanted to make this dip later in the week but don’t want to trek to the Mexican grocery. Are there any good substitutions for pepitas? I’m referring to this recipe from EatingWell, Green Chili and Goat Cheese dip.
I’d go with pine nuts (which are super expensive right now, so maybe not) or unsalted pistachios.
The recipe doesn’t specify if the pepitas should be hulled or not, but you could also consider toasting up the seeds from any winter squash (butternut, acorn, etc.) and using those. Depends on how much effort you’re willing to go through.
Mmmm interesting. I think I’d go with the pistachios, just because I’m not a huge fan of pine nuts. The seeds of squash…too much effort ;).
How finely should I be chop up the pistachios?

Pepitas are pumpkin seeds, you should be able to find them at any grocery store. Either in the candy section (near the sunflower seeds) or already shelled in the baking section (near the nuts).
God I feel so stupid…are they really just pumpkin seeds? Boy am I dumb. I’ll look for them Joey, and barring that, pistachios that I know are there.
