Milk lasts longer if pasteurised. Shelf life is extremely important to the food industry - the longer the better.
“Raw milk” is a storm in a teacup. A fraction of a percent of the population are going to insist on paying premium prices for it the same way they insist on buying preservative free salt, and lettuce grown without the use of plutonium.
Meanwhile, 99.9% of the industry will continue exactly as before, because even if consumers want raw milk, they want cheap milk that doesn’t go off quickly even more.
They also don’t want to have their mega corporation sued out of existence by giving Listeria to half the eastern Seaboard.
Yeah. Because you know the people dumb enough to insist on raw milk will blame everyone but themselves when they get sick from it.
That “storm in a teacup” could very well spiral into the next pandemic.
That didn’t seem to stop Listeria outbreaks at a few different ice cream outfits over the last few years.
Not wanting to get sued may prevent them from using raw milk but it’ll only really get them to do the minimum to stay in business and then make promises to do better when the inevitable outbreaks occur. And with the FDA and CDC potentially looking at staffing cuts, good luck detecting outbreaks until it is much too late and/or regulating ‘minimum’ standards at anything resembling a reasonable level.
You really need to consider the shelf life point. Dairy companies have massive, profit-enhancing motivation to pasteurise. They do not want to deal with raw milk and will not do so to any significant extent.
Raw milk fanatics’ needs will be met by a tiny specialist market. Everything else will carry on like before.
I’m willing to bet that at least one company will be coming out with “raw-style” milk, which will be safely pasteurized, but will also supposedly have all of the “benefits” of raw milk. Followed by raw UHT milk, of course.

Not by default. The gluten free raw milk is even more expensive than the ordinary raw milk. You can tell it’s better by the higher price tag.
