Here’s the best recipe that I’ve found. The suggestion to lightly coat the sliced sweet potato in cornstarch and olive oil, line the baking pan in parchment paper, works really well. Giving the crispy fries everyone wants.
Carbs are your friends. Live long & eat sweet potatoes.
Sweet potatoes are Nature’s perfect food all on their own. They’re best simply baked in their jackets, served either with a pat of butter or completely naked. I like them all kinds of ways, but please leave out the brown sugar. And for Og’s sake do not deck them in mini-marshmallows.

I voted “They’re OK.” but i wanted to clarify one thing:
I LOVE sweet potatoes (especially in a curry, or a soup/stew), but when it comes to french fried potatoes [/jimmy buffet], I really prefer regular potatoes over sweet potatoes.
I don’t dislike sweet potatoes, exactly, but every time I’ve eaten one, I’ve thought, “This would be much better if they’d used a regular potato.”
Not a fan, despite generally liking sweet/salty combinations. I’m not a huge fan of regular fries, either, but I like them better than sweet potato fries.
I like sweet potatoes raw (sliced into thin strips, with an optional light sprinkling of salt), candied (if done properly), or made into pie. I don’t like them fried or baked, and I really don’t want marshmallows on them.

I don’t like sweet potatoes in general. I tried the fries once because I like experimenting with lots of different foods, though. Deep frying makes them the least annoying sweet potato preparation I’ve had. If they were free and I was hungry I’d eat them again.
They’re quite bad, and I’ll never order them, but I’ll eat them if they’re the only thing. Occasionally the work cafeteria screws up and gives me SPF instead of normal. I eat 'em, but they’re a disappointment.
Just recently my daughter got sweet potato tots. I have no idea what this world is coming to.

I didn’t vote because I’m kind of between the top two choices. I love them (and I drown them in ketchup, just like regular fries or tots) but I don’t always get them. Sometimes I’m not in the mood, sometimes I don’t want to spend the extra dollar.
I make oven baked ones at home that I think are reasonably good. But then I figured out all the time I spent slicing them perfectly and soaking them in water and the $1 the tater cost? If I go to Trader Joes, they have frozen fries that are $2 for about the same amount of sweet potato so I’d rather get theirs and save myself all the work, and TJ’s come out more consistent than mine.
I think they have to be salty and not soggy. A little crisp, not crunchy.
