Tasty uses for leftover fried falafel?

I fried up some falafel balls last night for dinner - yum! (Full disclosure: they were from a mix. shame I’ve never made falafel before, figured I’d go with something more foolproof.) They were great! Crunchy outside, fluffy inside. Go me! But I made more than we could eat, and I now I’ve got about a half-dozen of them left, sitting safely in my fridge.

What can I do with them, besides re-heating them in the toaster oven? Ideas?

In my vegetarian days I would deputize extra falafel as meatballs, as in “spaghetti and”. I kind of liked it; good with a spicy arrabiata sauce.

They are great chopped up in a salad.

Make something with some nice romain, pita chips, tomato, mushrooms, cucumber, and chopped falafel, some parsely or pine nuts if you have them. Maybe mix in some carrots and other good stuff, raisins sound good to me. Then dress with a creamy but savory dressing. Something like creamy ceaser, or (if you have it) a tahini based dressing like Goddessdressing.

Damn, now I am hungry.
