Thanksgiving Day meal assistance?

I need a good recipe for sweet potato casserole. It’s a food I don’t normally make but hold out some hope that the Olethlings[sup]TM[/sup] might actually eat.

Anybody brave enough to share their recipe?

Sweet Potato Casserole!

Exactly which mountain do you live on?

Here’s the one my family makes:

Sweet Potato Casserole

1 cup sugar
1 stick butter (melted)
2 eggs (beaten)
3 cups cooked sweet potatoes

  • Mix above ingredients, spread in baking dish or large bowl

Topping

1 cup brown sugar
1 stick butter
1 cup chopped pecans

  • Melt butter and mix in sugar and nuts.
  • Spread mixture over top of sweet potato mixture from above
  • Bake casserole for 30 minutes, uncovered, at 350 degrees (pecan topping should be crusty).

Hope this works out for you. We refer to it as dessert disguised as a vegetable. :wink:

Thanks Jadis, that’s sounds about right. I might have to play with the recipe a bit (it’s in my blood). About how many servings is that?
Two cups of sugar to three cups of sweet potatoes, eh? That’s some kind of health food. :wink:
