Swiss and Blue. That still wouldn’t be adequate, but they would be my two absolute favorites,
Provolone and swiss!
I guess my cheese palate isn’t all that sophisticated. I haven’t even had most of the cheeses on that list.
Velveeta and Romano… let them eat cheeze.

Haloumi and Boursin … but if the cheese gods only allow two, then it’s time for deicide.

It’s too cruel. My first thing was “Sharp cheddar and pepper jack”.
But then I started looking at the list…I can’t pick two. I was thinking of sandwiches—I forgot Italian food! And how great a good schmear of expensive bleu cheese is. And was there cream cheese on that list?
Or the mexican white cheese?

I asked the question because I can’t answer it myself! Make sure I have decent pizza, so I need both mozz and parm, but lasagne is all about the ricotta blend! No cream cheese and all the joys therein? How could I go on without cheddar or jack… Macaroni and cheese would be impossible!
I adore cheese, and a very close friend of mine completely blows me away with the fact that he doesn’t like cheese. Not certain kinds, ALL kinds. No hard, no soft, no brie, no pizza, no cheeseburgers, no enchiladas, no mac n cheese no parm cheese toast… this amazes me. That a person could hate every single kind of cheese. It’s not an allergy, he actively dislikes all forms of cheese.

And it makes him a pain in the ass to cook for.
I’ll take Stilton as my blue. And then, a toughie. It’s a toss-up between a sharp Cabot cheddar or a 5-to-7-year aged Gouda.
Sharp cheddar, and Stilton. I like plenty of other English and European cheeses, but if I have to choose, there’ll be barely a pause.
Parmesan and Swiss off the cuff… but I don’t think I could really chose just two cheeses if I were to actually find myself in that situation. I could probably live without mild cheddar, cottage, muenster, Gorgonzola, goat, and a couple others on the list I’m not familiar with. But to be forced to choose just two of the remaining? I think it’s impossible.
Camembert and Stilton. Next!
Nope. I’m sorry. If this is what the Cheese Gods have decreed, then it’s time for me to start getting serious about earning experience points so I can level up and take them on.
You can not live on 2 kinds of cheese. Italian food alone requires more. Add in Mexican food and the situation becomes impossible.
Maybe we can get the Beer Gods to kick the Cheese Gods asses?
Mozzarella and paneer, so I could still have the former on pizza and the latter in curries.
I like those two also, but dropped by to post my own sad story.
AFAIK, the closest place from where I live to a store that sells Swiss cheese or Blue cheese is about a three-hour drive! It’s more than a one-hour drive just to get any cheese other than cheddar!
I like cheese, but fortunately am not a big fan. When I do visit the Big Mango, I go by bus and usually bring back a bit of Swiss and ground Parmesan for spaghetti. (Unfortunately, soft cheeses would end up outside refrigerator too long to still be delicious.)
Other blue: Saint Agur.
Other mild: Samsø.
A horrible poll, btw (not the poll but the situation). It actually took me longer to decide here (and I feel worse about having to make the choice) than in the “Lose a pinky/testicle”-poll in IMHO.
I voted in this poll to humor the OP, but it really isn’t necessary, because I am the cheese god.
