What happenned to the other Rings once the One Ring was destroyed? We know that the Elven Rings survived, wielded by Cirdan, Elrond, and Galadriel, but what of the other Rings? Sauron gathered the dwarven Rings to himself, slaying the owners, but did he destroy them? And the human Rings were presumably worn by the Nazgul, which means that there are nine Rings laying around on the plain of Gorgoroth.

Don’t have an answer, but a minor nitpick – Cirdan didn’t weild one of the Rings; Gandalf did.
Sauron held the rings of the Nazgul, or so the preponderance of evidence says.
Faq of the rings.
As for the Dwarven rings, I’d presume Sauron held onto them. In JRRT’s earliest drafts of the story, Sauron had planned to give them to more Elves to try to corrupt them, but when that failed, he used those rings to snare the dwarves. Since he’d invested some power in them, it would make no sense to destroy them. I expect they got trashed when the One was unmade.
The Three Rings of the Elves were rendered powerless by the destruction of the One Ring, so it’s safe to assume the same fate awaited the rest of the surviving Rings of Power. Sauron recovered and/or hoarded whatever other Rings were not lost to dragon-fire or what-have-you, including all of the Nine (presumably to directly control the thoughts and actions of the Nazgûl when necessary); and given what a state Barad-Dûr was in after the One was cast into Mt. Doom’s fires, not only are those rings powerless, they’re under a mountain of rubble as well, at best.
Cirdan did wield it for a few millenia. They were forged by SA 1600. Gil-Galad either gave it to Cirdan by 1700 or perhaps not until as late as SA 3430, if you credence a notation used in Unfinished Tales. Gandalf didn’t get the ring until about TA 1000.
But you are right in that Cirdan never did wield the ring, as he was quoted as saying “It was entrusted to me only to keep secret, and here upon the West-shores it is idle.” [UT: Istari (389)]
