There are people who post to threads, simply to get them to the top of the message list. There’s a word for this: “bumping”. Of course no right-thinking person would do such a thing. But for those that do, there’s a name for them, too:

Let’s not forget the Honky Soul Food thread. It’s a short thread, but there are some really tasty things in there. I’m now pondering hash browns, biscuits, and brown gravy for breakfast this weekend…

Here is an offering from Edlyn and me…

Lib’s Meatloaf

Ingredients

Loaf:

1 lb ground round or chuck

1 large egg

3 cups chopped vegetables (can be onions, bell peppers, whatever your heart desires in any combination…)

Topping:

1/2 cup dark molasses

1/4 cup ketchup

1/8 cup yellow mustard

1/8 cup melted butter

Preparation:

Combine ground beef, egg, and vegetables by folding until vegetables and egg are evenly distributed. Place mixture in 7" x 11" baking dish (or equivalent) and spread out about an inch or two high. This is a flat meatloaf (like a cake) and not a tall meatloaf.

Combine topping ingredients, stirring until thoroughly blended. Pour over loaf and spread evenly.

Bake at 350 degrees for about 45-50 minutes. (Because it’s flat, this meatloaf won’t need to cook as long as traditional.) When done, broil for about 5 minutes until topping carmelizes. (Be careful and don’t burn!)

Serve immediately, and make great sandwiches the next day with refrigerated leftovers.

“Soup of rice with chicken” just doesn’t sound as appetizing as “soup of chicken with rice.”
