What was the name of the Three Stooges Theme Song that was NOT “Three Blind Mice” but was played on several other shorts starring Curley? In fact, it’s sampled at the end of “The Curley Shuffle” song. Any ideas who may have written it?

Do you mean Listen to the Mocking Bird, one of those cheerful Victorian ditties that Twain made fun of in Huckleberry Finn? Written by Septimus Winner, pretending to be a depressing female poet.
