So what? Pasta is nothing without a good tomato sauce, and Europeans didn’t even know about tomatoes until they got brought back from the New World, and even so they were suspect for a long time and didn’t become a really widespread food until the 19th century. I mean sure, you can make stuff like fettuccini alfredo or spaghetti carbonara without tomato sauce, but think about it. Spaghetti carbonara, for instance: heavy cream and bacon on starch. Enough cholesterol for ya? Like, heart attack on a plate. But throw on a decent mellow tomato sauce instead and some sauteed mushrooms, and you got yourself a meal. Meatballs optional but the right kind (lean) are great. A bit of ground veal makes them better but don’t get me started about veal and animal cruelty. And then there’s pizza. What the hell kind of perv thinks it’s a good idea to make pizza without a decent tangy pizza sauce?

And with regard to Granny Smith, no, I wouldn’t want Granny or any of her damned apples on my spaghetti. Or my pizza. Apples on a pizza is just weird. Who the hell came up with that?

I was just thinking about how much I loved my mom’s chicken and dumplings. She made them in an electric skillet – bone-in breasts with dumplings on top. Not a stew like you sometimes see. Salty chickeny drippings from the pan on the dumplings, yummo.

Honestly, I have started so many threads about PC•SADS (Plastic Candy Stand-Alone Delivery Systems)… I blasted the counterfeit Piz (sic) “Star Warts Episode 9” series, blew the cover off the sub-quality mystery berry candies from the Schenectady plant, and tried to get a serious heart-to-heart about the 1954 Cisco Kid/Poncho dispenser twin-pack. And someone only identified as “The Masked Mod” keeps moving these threads and more to the Barn House forum…

Let me guess, you watch TV shows on YouTube… but that doesn’t count. Amirite?

The idea that pasta is no good without tomatoes… heresy! With alfredo sauce, with pesto, with just a little olive oil and pepper, even Western pasta has so many delicious options. You add dumplings and noodles from Asia and there’s a regular universe of delicious pasta dishes.

I wonder sometimes about the history of pasta in humanity. It seems like it’d have taken quite a while for someone to experiment long enough to work out, yet it’s common in many societies that have grain access. I think this calls for some Google or Wiki searches…

FTR, I wasn’t being entirely serious! :slight_smile: Some of those alternatives are good stuff, and I love pesto. Although in truth, alfredo sauce which is delicious is also high in Bad Stuff like calories, fats, sodium, and other things that try to kill you – so moderation is key here.

Coqui frogs! They are almost everywhere on the Big Island. They sound like birds. They are loudest at dusk, but I can hear a random few even as I type.

As an invasive species, they are a bad thing. But setting that aside, they are quite pretty to listen to. The night air at my house is filled with the sounds of frogs, insects, birds, the waterfall, and (sometimes) rain and wind. It’s a jungle out there! I love it. (Only 4 more nights to go, then I leave again for at least a few months. I haz a sad.)
