This week’s going fast, but I want it to be over. It’s tough when Mon and Tues are so busy because then the motivation to work hard during the rest of the week just doesn’t happen. Bleh. It was delish, taxi. Here ya go:

Madras Coconut Chicken Curry

1 chicken breast, sliced thin
½ onion, chopped or sliced
2 celery sticks, sliced thin on an angle
12 pea pods, or ½ cup frozen peas (I nuke frozen peas first till warm-ish)
½ red bell pepper, sliced, chopped or finely diced
1-2 cloves garlic, minced
6-8 scrubs of frozen ginger across a microplane—about 1 T minced
1-2 T Patak’s Madras curry paste
fresh cilantro and/or green onions
squeeze of fresh lime
vegetable oil for stir frying
1/2 can coconut milk (the kind with the least ingredients)

NOTE: If you have the premium coconut milk, just can just use the thick stuff on top, or shake the whole can before you open it for a thick cream.

Add a good splash of canola oil into hot wok. Stir fry the chicken. Add onion, garlic, ginger, curry paste. Toss briefly. Add celery and pea pods/thawed peas. If you chopped your bell pepper into chicnks, add them now too. Toss a minute or two. Add enough coconut cream to make sufficient sauce. Squeeze lime to taste. Continue cooking just until it starts to boil, then remove it from heat. Toss in cilantro and/or green onions and stir to wilt a bit. Serve over rice.

VARIATION: You can use less coconut cream and add chicken stock for an awesome soup.

Brief moment to post between insanities. I came home from work, took the doggies out, and came into the house with doggy poop on one shoe. Stoopit doggies! I made up a great big pot o’sketty sauce - some for supper, most for the freezer.

Talked to **FCD **- he got an email from one of the company VPs wanting to know if he’d like to discuss being a division director - having up to 100 people under him. :eek: On the plus side, it’ll be more money, and he’ll have real engineers working for him, not like that idiot woman he had at NASA. On the down side, he doesn’t like being in charge as much as he likes being a designer. Still, he’s only been there less than a year - obviously he’s impressed someone. I knew he was a good 'un, even if he doesn’t believe it. Anyway, he needs to decide if he’s interested or not.

I need to do a sketch for my first project in class, and I need to pack my tote so I’m not taking a wal-mart plastic bag for my stuff. That’s kinda tacky. I also need to change - don’t wanna get my nice pink top all grubby.

We’re changing department names soon. Going from a torturously long name to Access Managment. I’m thinking “AxMan” as an abbreviation, and that we could somehow adopt a firefighter with ax as a logo. I was also thinking of married irons, but I fear that nobody else would understand.

However, I still think some of our users need a whack on the head with a halligan.

Is there something about this January that makes it obligatory Angel-watching season? I’ve been watching season 1 on hulu since I missed it when it was originally shown. They have season 1 of Buffy too. I imagine I’ll make it to that eventually and then borrow the remaining from the library.

I’m making plain sketties with butter and cheese. That just sounded good. I’m sure I’ll find some veggies to go with that too. Maybe peas?

I have chawklit chips layin’ out on the kitchen counter to motivate me to make tollhouse cookies tomorrow since I’m off and all. Bakin’ up some cookies will make it look like I accomplished sump’n. Well that and defilthyfyin’ (is too a word!) da cave.

Howdy, all. Have read all and retained not much. Except for cute pictures of cute little girls (HRH and Paula). Anyway, I’m feeling somewhat antisocial, plus I have a pile of work to do (finally!), plus I have that concert to watch on YouTube (thanks, I think it was gt!), and at some point I’d like to get some sleep since I’m yawning my head off already. I am truly pathetic sometimes.

Anyway, hugs to those who need them, and I’ll try to be more chatty when I get caught up on this work. And at some point I need to show you guys the pretty lacy scarves I’m going to make for my two nieces who are graduating this spring, one from college (she’s the one getting married in 2010) and the other from law school. But I’m too tired to dig up the links right now.
