I believe she could serve as both President and Speaker. The Constitution doesn’t require the speaker to be a member of the House. If someone can serve as both an elected Representative and Speaker at the same time, why not also President and Speaker?
I believe if Trump loses then he’ll leave the White House immediately and spend the remaining 11 weeks of his term at Mar-a-Lago and his golf clubs. He never wanted to do the work of a president. He just wanted the power, status and adulation of being president. If he loses, especially by a big margin, he’s not going to carry on his duties for what remains of the term. If the American people reject him his form of revenge won’t be to go fully deranged and try and start WW3. His revenge will be petty by unofficially relinquishing the presidency. He’ll still be the officeholder but not around anymore.

She has to resign her seat in the House to take office as Acting President, so she does. Then, just before the new Congress, she resigns being Acting Pres and takes her seat as representative in the new Congress. It could be as little as a couple minutes between those last two actions. Whover is President Pro Tem of the old Senate then gets to be Acting Pres until the inauguration on the 20th.
I know the Trump presidency has rewritten the rules of what’s possible in politics, and maybe it’s wishful thinking, but all this worry about Trump not leaving office, sabotaging the government etc. feel really overblown to me. As guizot says, that all feels too much like work for a guy as lazy as Trump.
I think what is fairly likely is that Trump will refuse to concede even in the face of a definitive loss, and that even after he does sort-of concede, he’ll continue to undermine the results by accusing the Dems of stealing the election. He’ll find a lot of receptive ears among Republicans (some true believers, some cynically playing along), clouding the waters and making sure that President-Elect Biden’s run-up to inauguration is filled with bullshit news stories about the “stolen” election. This will have the added benefit of keeping Trump firmly in the spotlight as his term runs out – the only thing that really motivates him.
