Does anyone have a recipe for turkey soup made out of leftover turkey?
You can use any portion of the turkey, including bones, to make stock. Just simmer the leftovers, strain, pick out any meat, throw the bones away, and use the stock the same way you’d use any stock or broth. Turkey noodle is easy.

Well, Do you have any turkey stock? If not, you can use canned chicken stock or you can boil a turkey carcass until you have stock.
Put stock in the pot.
Put pot on the stove on medium heat.
Put the turkey meat chopped into bite sized pieces in the pot.
Put in a diced onion or several boiling onions, cleaned,
a clove or five of garlic, minced or pressed through a garlic press.
Add a stalk or two of celery
A carrot or three chopped up
Mushrooms, fresh or canned.
Other suggested vegetables are: canned peas, drained, freshly steamed artichoke hearts, okra (but not too much), peppers (sweet or hot), potatoes, bok choy.
For spices, a bit of marjoram, rosmary, thyme, Sage (sparingly) salt and pepper, a bay leaf (remove before serving).
Simmer on the stove until the vegetables are tender.
Cook the noodles seperately and add when serving.
The reason you do this is because if you have leftovers, they freeze wonderfully, but not if it has noodles in it.
So every time you want some, just reheat, make some noodles and add to the soup.
Or you can separate out enough for dinner and add the noodles to that. I think the noodles taste better when made in the stock
Or you can use barley or rice instead of noodles.
