Ways to cook steak?

According to my dad the chef, that’s “charred rare”. The local steak chain calls it “Chicago Style”; almost burnt exterior, rare to med-rare interior. My favorite way to have a steak, and usually best left to professionals.

I use another method, adapted from the British culinary maverick Heston Blumenthal - heat the oven to only 70C (dunno in F), which is a temperature chosen to do with not breaking down protein chains or something, and put the steak in for 20 minutes or so, until it is evenly hot. Then remove from the oven and sear very quickly on each side. It’s simple and produces really good results.
