We had a bake-off this morning at work

And I got second prize with my caramel mudcake. I was beaten by one of the members of the HR department who had made a traditional Greek cake laced with ouzo.

We had a dance off at my work this morning. I took first place with the White Tornado.

Congrats, second place isn’t bad and alcohol is hard to beat. Your cake sounds yummy, I second the recipe request.

Here 'tis:

Cake

Ingredients:

125g margarine
1 cup brown sugar
125mL cream
1.75 cups SR flour (sifted)
2 eggs (lightly beaten)
1 teaspoon vanilla essence
1 cup of white chocolate melts, combined with three-quarters of a cup of boiling water

Grease and line the base of a 20cm round tin. Heat the margarine, sugar and cream over a low heat. Stir until melted, cool slightly and reserve half a cup of the caramel sauce for the icing. Gradually add the flour and the eggs and mix until smooth. Add the vanilla essence and the combined white chocolate melts, mixing well. Pour the mixture into the prepared tin. Bake at 150C for 1 hour and 15 minutes or until the cake is cooked when tested. Leave the cake to stand for 10 minutes before turning it out to cool. Spread it with the caramel icing.

Icing

Ingredients:

30g margarine
90g softened cream cheese
third of a cup of icing sugar
half a cup of the reserved caramel sauce

Cream the margarine, cream cheese and icing sugar mixture until light and fluffy. Beat in the reserved caramel sauce. Refrigerate until the icing reaches a spreadable consistency.
