The Two Cake

With One Icing, naturally.

My grandmother used to make “Mexican Wedding Cake” for us, although we’ve never been able to determine why it was named that way and it really doesn’t make any sense.

I was missing Gram and called around aunt to sister to cousins until I found someone who still had the recipe and it’s just as yummy as I remember it, dark and chewy and similar to carrot cake. Although I’m re-christening it Two Cake, I’m sure Gram will understand.

Two Cake

2 cups sifted flour
2 cups granulated sugar
2 large eggs
2 tsp vanilla
2 tsp baking soda
2 cups undrained crushed pineapple

I usually add a cup of crushed walnuts, but that doesn’t work with the two-ness so I’m not listing it.

Mix well, pour into prepared 9X13 and bake at 350º for 40 minutes.

One Icing

1 brick cream cheese (8 oz)
1 stick real butter (1/2 cup)
1 cup granulated sugar
1 tsp vanilla

Beat on medium speed until incorporated, then whip on high for 1 minute.

Sounds interesting.

I’ve always thought Mexican Wedding Cakes were actually little roundish cookies covered with powdered sugar. We used to make them all the time around Christmas.

2 half cup packets of walnuts?
