What all foods go good with vegetables

I’m trying to eat 3-4 servings a day of fruits and vegetables now, the fruits are easy to take care of since they taste good (spoilage is a problem but I can just buy canned or dehydrated), however vegetables are something of a problem. Most taste bad by themselves, but with other foods they can taste pretty good. ie, eating onions and peppers on their own is nasty but putting them on an egg omelette tastes pretty good. Mexican food is another type of food that goes good with vegetables. What other foods go good with vegetables aside from omelettes and mexican foods?

Good call, i’ll add that to the list of ways to get more vegetables in my diet.

You could try:
Chinese stirfry - chicken/beef with garlic, ginger, carrots, onions, bok choy, celery, zucchini, capsicums, cauliflower etc with some oyster sauce and brown rice

Malaysian fried noodles - chicken stirfried with malaysian curry powder, soy sauce, carrots, cabbage and onion

Thai curry - green/red curry paste with chicken/beef/fish, carrots, broccoli, bean sprouts, coconut milk, fish sauce with rice

Indian curry - beef/lamb/chicken plus curry paste potatoes, cauliflower, peas and mushrooms and naan bread

Risotto - with onions, roast pumpkin, peas or zucchini, green beans etc

Vietnamese rice paper rolls - with shredded carrots, bean sprouts, rice noodles, cucumber and fishsauce/lime juice dipping sauce

Pasta - with mushrooms, broccoli, pecans and blue cheese

Chili - add in peppers, zucchini etc

Serve meat with a tomato/onion/pepper salsa

Basically most meat based dishes can be bulked up with vegetables which will mask the flavour (if that’s a problem, personally I love veges in all forms), and give you added fibre and vitamins.

Buy frozen ones if durability is a problem - as these are flash frozen soon after picking, the nutritional value can be higher than fresh veges.

Stir Fry.

We regularly have things like green beans, peas, or corn as a side dish with dinner. I usually sprinkle them with salt and pepper and melt a tiny bit of butter on them.

We also have salad pretty regularly, usually with tomatoes, garbanzo beans, olives, etc.

BLT - or even better, a BLT with Avocado.

Caprese Salad is a favorite snack of mine - just some fresh mozzarella, basil, tomatoes, olive oil and salt & pepper.

Artichoke hearts and sun dried tomatoes are good in pasta dishes.

I’ve seen you post in other threads that you are working to reduce your waistline - since July I’ve lost 45 lbs (and 8 inches from my waist) by switching to foods that are high in nutrition. I eat a ton of fruits and vegetables every day :slight_smile: Try to pick brightly colored vegetables!

Veggie Ideas

  • Pile lettuce and tomatoes on sandwiches
  • Add veggie toppings to pizza
  • Keep cut up carrots in the frig for a quick snack
  • Use salsa on eggs, baked potatoes, fish, chicken
  • Instead of a baked potato, try a baked sweet potato
  • Add frozen vegetables to soup
  • Make your own pasta sauce - 2 cans whole tomatoes, 8 oz tomato paste, fresh basil leaves - process in a blender/food processor until smooth, add to sauteed onions/garlic. Throw in a little red cooking wine, some sun dried tomatoes, other veggies, salt, pepper, red pepper flakes - awesome and no corn syrup! Serve over whole wheat pasta, but be aware of how small a “real” serving of pasta is

Fruit Ideas (JIC)

  • Use a blender to mix yogurt and fruit for a breakfast smoothie
  • Add banana slices to whole wheat toast and peanut butter
  • Add baked apple to oatmeal

Good fresh vegetables shouldn’t be yucky even if all you do is steam them and add a little salt and pepper. However if you really aren’t a veggie eater there’s already a lot of good suggestions here.

Are there any veggies you might like raw? Raw carrots and celery sticks can be good snacks plain or you can make a low fat dip with some low fat or non fat yogurt and some seasonings. I actually love celery with just a dash of seasoned salt. Other veggies are good raw too, but if you’re veggie squeamish you may not go for those (broccoli, cauliflower, bell peppers, sugar snap peas, snow pea pods, etc.)

Baby carrots are good, potatoes are good too when baked. Celery with peanut butter is good too and some kinds of broccoli (good quality broccoli) with melted cheese is good too. Some kinds of peas & beans are ok on their own also. Beyond that though I don’t like vegetables on their own.

If you’re trying to lose weight you might want to stay away from the melted cheese. I guess a little would be okay, but it’s easy to go overboard unless you’re very disciplined, because cheese is so, so delicious.

Anyways … you can make vegetables more palatable by adding herbs or other flavourings. Try cooking your peas with a little thyme, or squeeze some lemon juice onto your brocolli. Tomatoes are good with basic, organo, mint, or thyme. Chili pepper and garlic with spinach is a favorite of mine. That also works with brocolli, kale, rapini, and similar vegetables. Caraway seeds with cabbage. Corn with cumin. Experiment!

Instead of cheddar cheese on broccoli, try grated parmesan. The harder the cheese, the lower the fat content.

Instead of peanut butter - try almond butter.

I guess I don’t really like vegetables too much by themselves either. I wouldn’t sit down and eat a pile of raw broccoli. Broccoli in a yummy stir fry with tasty sauce is the best, though.

I can still eat cheese and lose weight w/o problems though. I ate 2 tuna sandwiches for lunch today with cheese on them. I also put alot of romano/parmesan cheese on my spaghetti.

I likewise put veggies in my pasta; being a bit of a Veg, I put red kidney beans in w/ my pastas, especially cheese tortellini. Gives me protein, fiber, and maybe balances out all the fat in the cheese. You could use white ones as well. I also cut up a raw pepper of the sweet, mild sort into the pasta just after I add the sauce. They don’t get mushy, just a little soft. No steaming required!

I don’t think anybody has mentioned sauerkraut. That’s very tasty (especially with a few caraway seeds), but watch out for the salt. Pickles go nicely on a sandwich, but are salty as well.

Fresh cabbage is good too, either as coleslaw or cooked with a little butter and maybe more caraway. (Cabbage rolls too!) Kohlrabi is another cabbage-family veg, good cut into sticks and dipped in that yogurt blend mentioned above.

Invest in a veggie steamer. It’s a cool appliance that doesn’t take up much room and in mine at least there is this little ummm… space where you can add fresh herbs to infuse some flavor into the steamed veggies. Course I put herbs in with my veggies but if you want to try something like bay leaves or lemon grass that little space would be a good place to put those.

Yes, I know lemon grass is edible but it’s kinda overpowering to me so I like to use it then remove it like I do with bay leaves. I love the flavor it infuses.
