What are “5 Cracks” as in "5 Cracks of freshly ground black pepper?
I used several search engines, search terms, and cook books. All without success.

5 twists of the pepper mill? And however much falls out during those twists is the ammount to use.
That’s what I’ve been doing as well. I’ve not killed anyone with a pepper overdose yet, so it seems to be correct.

Recipes that I have seen have tended to use the terminology “x *twists * of pepper”.
Wow, I’ve heard some stupid measurements before, but that’s the best.
Which pepper grinder should I use?!
Can you suggest a better one? Typically, you want to use in the order of about a gram of pepper or less which is too little to weigh or use teaspoons for. It’s also hard to pinch freshly ground pepper so crack seems to win by default.
With black pepper being one of those “season to taste” ingredients, I suppose it’s good enough a measure. A little goes a long way and most people eyeball the proper amount. Even if there was a good way to measure a certain quantity of fresh cracked pepper, listing it on a recipe as such would be an excersise in futility.
I finally found some small measuring spoons:

Still haven’t heard from recipe source as to their definition of a Crack of Pepper!
