Besides Hope, a few that come to mind are:
Defiance, Ohio
Independence, Missouri (and also Kansas)
Liberty, Missouri (and other states).
Anchorage, Alaska
Republic, Missouri
Adjacent is Noel, Missouri, which (perhaps disappointingly) is not named for Christmas, but rather Messers Noel (to rhyme with pole), who founded the town. But it also means “Christmas,” so…
Off the top of my head, Comfort, Texas, in the Texas Hill Country.

Named after early settler William Boring.
Named after the game show as a publicity stunt.
We have a few place names here in WA that probably fit - Point Defiance, Cape Disappointment, Deception Pass, Mt. Terror, Dismal Nitch, and my favorite, Useless Bay.

I wish I could say I was from Liberal, Oregon.
I just got back from Carefree, AZ.

Gore
Liberty
Loco
Loyal

Boring has two sister cities that qualify: Dull , Scotland and Bland Shire†, New South Wales. Also, I believe there’s another Boring in Maryland.
†A shire in Australia is more like a county rather than a town. But who cares when humor is involved.
ETA: Peculiar MO.
There is an unincorporated community in Michigan called Hell.
