we’ll be going to our friends’ 100 yr old remodeled farmhouse for a potluck dinner, copious adult beverages, and annual gag gift fest. There’ll probably be 20 people or so, and there’s plenty of space to sleep for those so inclined. It’s a good time, and we’ve been doing it for over 5 years, so we know what to expect. Celebration, but not out of control.
Simplified Oysters Rockefeller - now, feel free to correct me, anyone from around Louisiana…
Shuck oysters (as many as you want), keeping only deep half and liquor. Steam spinach, add chopped garlic (just a little)…put on top of oysters set in salt or I guess you can probably get sea salt to keep them stable.
Make cheese sauce - little bit of butter, add some flour (about a teaspoon for a dozen oysters), brown to make a roux then add about quarter cup or half of milk. Then add your swiss cheese to make it about the texture of bernaise.
Then pour on top of oysters, put under broiler until just brown…be careful, IT’S HOT!

Helping to set off about $3K (at last count) worth of fireworks in our friends’ backyard, which just happens to be a golf course. 
I’m so excited, I can hardly wait. We did a smaller version on the 4th of July, and it was a blast.
