What are you making for the Office Holiday Potluck?

Stuffed mushrooms.

The party was already held, and the mushrooms were enjoyed, especially by my family since I brought half of them back home.

Yesterday. We couldn’t afford to go out this year, but the potluck was so much better - great food and lots of it.

Lemon-pesto-goat cheese dip and veggies. It was yummy.

Yes - I made it the night before. I brought the chopped pecans in a separate container and stirred them in at the last minute to maintain maximum nut crunchiness.

I did learn a lesson - it wasn’t nearly as popular as the deviled eggs I brought last year! (I thought it was delicious).

I was the hostess, so I made tabbouleh, tossed salad, iced tea & a chocolate chip cheesecake.

Likewise! The guy who spent 20 bucks on a ham and popped it in the oven for an hour got all the kudos. :wink: Those who tried the salmon did compliment it, and even push others to have some, but there was a good 1/2 pound of it left.

But you know, I almost never get to make grown-up food these days; so I"m still glad I did it. And I absolutely loved it! LOL!

It’s funny, I like to think I’ve overcome my roots, but there is a Southern-girl-at-the-Church-social who comes out in me when my dish isn’t scarfed at a potluck. She’s really most annoying. . .

I made a pasta salad with tri-color pasta, spinach, red and yellow peppers, red onion, peas, and a whole bottle of asiago peppercorn dressing. It was super easy, and seemed like I worked hard on it despite having forgotten about completely about the potluck until 4 hours before work.

Ours is next week. I think I’m going to make Apple Crisp.

The quinoa salad sounds really good, but I suspect my co workers will look at it like it’s some kind of alien food, because, well, it’s quinoa. Might have to make some just for me. Is there a recipe you can share?

Sure, I kind of melded 2 online recipes together. Basically, it was:

2 cups red quinoa (got from Trader Joe’s made with 4 cups veg stock)
3 small sweet potatoes - diced on the small size and roasted at 450 until they were crispy-ish (shook the pan several times, about 25 minutes total)
4 boxes of cranberries (I had the boxes leftover from Thanksgiving recipes)
Chopped pecans (honestly, I didn’t measure these, I had about…a cup maybe a little more? left over from Thanksgiving, chopped them up and reserved until the last minute)
The dressing was 4tbs fresh squeezed lemon juice, 4tbs olive oil, cayenne to taste (I doubled the original recipe that called for 2 and 2)

I made the quinoa, added the cranberries, roasted sweet potatoes. Whisked the dressing in a bowl. Added dressing to quinoa, stirred everything up. Refrigerated overnight. Right before the potluck, I stirred in the pecans. I might have added a tiny bit more cayenne.
