What can I make for dinner from this?

I’ve gotta run home and make dinner in a bit, and I’m trying to figure out what I can make with about 1 cup of cubed pork, onions, garlic, maybe some frozen mixed veggies (broccoli, cauliflower and carrots, maybe 1-1/2 cups), rice, pasta…the general items I have lying around the house.

Anyone have any brilliant ideas? I don’t really want to do a stir-fry, as my son’s not crazy about 'em.

How about pork in barbecue sauce, with veggies on the side? I don’t usually keep barbecue sauce, but I make it with tomato paste or sauce, molasses, mustard, worcestershire and a dash of ginger. Saute the pork with onion and garlic and then add the sauce.

You could serve it on sandwiches or with rice. I usually have the supplies to make cornbread to go with it, which is the best thing.

Dress the veggies up with garlic, lemon and whatever herbs you like.

Fry the onions and garlic in a bit of butter. Add in a bit of ginger to taste if you have some. Toss in the pork cubes and brown evenly.

Add a can of cream of(whatever you have on hand) and a bit of water.

Let it come to a boil and add the frozen veggies.

Cover for a while stiring often. (5 to 10 min) Medium heat.

Remove cover and let most of the liquid evaporate while you stir. The soup will get very thick and stick to the meat and veggies.

Put this on a bed of rice and voila a DMAAN original.

I do this often with chicken but have done it with pork and it is very tasty. and quick

Do you have salsa, or a can of tomatoes + mexican seasoning like cumin, chili powder, cayenne, Tabasco or equivalent?

If so -

Fry onions and garlic in oil. Add in pork cubes, brown. Throw in a big spoonful of salsa, or the tomatoes. Add seasonings to taste. If you have limes or lemons, juice 'em and throw that in, too. If you have a can of beans, you can throw that in, too. Sometimes I throw in some red wine, or some beer. All depends on what I have around the house.

Cook until pork is done.

Serve over rice with frozen veggies on the side. If you have some cheese, grate that on top.

Toss the pork in a food processor and give it a coarse chop (or do by hand). Brown it off with the garlic and onions in a little olive oil (depends on how much fat is in the pork), then add a little oregano, a little basil, s&p, and a can of crushed/whole tomatoes or tomato sauce. Instant Bolognase…sorta. Toss it with some pasta and you’re done.

Brown the pork and the onions, then do up some spanish rice and have carnitas tacos. Of course, that depends on the state of your cupboard! In CA, we almost always have salsa, rice, beans & totillas on hand just in case of culinary emergency!

When in doubt, or in case of emergency, turn it into a taco…

Great ideas, all! I’ll probably end up using all of them at some point, but tonight, the Dumpling of Joy begged for breakfast for dinner. So we wound up having scrambled eggs and ham (left over from Thanksgiving).

Sigh…kids these days. Don’t appreciate Plan B Pork.

You could do a pork fried rice. There is also the possibility of a meat gravy over the vegetables.
