What can I make with these Japanese noodles?

I scored several packages of Japanese soba noodles, woo hoo, cheap! There are white wheat and the buckwheat. Now it occurs to me…what do I put on them, or what do I make with them that’s easy, not calling for several exotic ingredients? Hot, cold, salad, soup? Please give me some suggestions.

Okay you want this recipe (minus the peanut oil), plus these veggies, in whatever quantity you like:

-sugar snap peas
-shredded carrots
-julienned red, orange, or yellow bell peppers
-grilled shredded or chopped chicken breast

This is the best! Enjoy it hot or cold.

ETA: Up the scallions too, if you like 'em. Be careful not to overcook the noodles! They go from al dente to gummy easily.

Toss them with peanut sauce.

… or one of the tasty sugar-laden “teriyaki” sauces. Or make your own sauce with soy, rice vinegar, and honey. Add sesame seeds and chopped chili for interest, eat cold. For even more fun wrap them in lettuce leaves to make healthy lettuce wraps.

Use them as noodles in a chicken noodle soup. For asian flair, simmer some ginger and green onions in the broth. Add tofu. Feel virtuous.

Use them with shredded cabbage, carrot and chicken in a thai-style slaw, with peanut sauce.

Top them with leftovers, a fried egg, and some chili sauce for bibimbop.

I LOVE buckwheat noodles!

Here’s my recipe for cold soba noodle salad. It’s not outstanding, but it’s not bad, either—I’d give it a six on a scale of one to ten.
