What do YOU serve cornbread with?

Cassoulet, bean casserole with a fancy name. Deal with it. If you don’t want it, I’ll eat your share.

I believe it. The aforementioned Soup Beans and cornbread is NOT a Brooklyn staple, believe me, but my spies in the South and Appalachia tell me it’s a real thing.

Experiment then, do what works for you. I like the lighter texture that a little leavening provides. If you don’t like it, don’t use it.

I love cassoulet and I love soup beans. One requires a baguette, the other needs cornbread.

You’re always welcome at my table to as much as you can eat, but if you try to take my share, you’ll draw back a stump.

For good cassoulet, it might be worth the risk.

Potato soup is good with corn bread.

One hint - With regular wheat based pancakes, you can cheat and make them a bit bigger than the spatula you’ll use to turn them. Don’t try that with corn griddlecakes. I keep mine under four inches across.

I make a fried corn bread called Hot water cornbread.
Yellow corn meal
Diced onion
Boiling water,
2 eggs
Stir it together quickly adding eggs last,
Into a thicker than pancake batter.
And fry in a iron skillet with a little oil.
They will puff up some, turn them and finish cooking. Good stuff.

You were right the first time: Hobo Beans.

Black-eyed peas and cornbread with a good hot sauce or salsa is the food of the gods. Crumble the corn bread, put the peas on top, then sprinkle with your favorite hot condiment. I’m from East Texas.

Caveat: I don’t like this with sweet cornbread or cornbread made with creamed corn. In my mind, sweet cornbread is cake and I consider that dessert, which I don’t usually eat. Other members of my family disagree.

My favorite way to have cornbread is warm with butter and maple syrup.

I serve it as a side to another piece of cornbread with butter and maple syrup.

With fried catfish. Ideally also with greens, some beans, and some good hot sauce.

No not too fatty.

If I wanted to put extra effort into it, I’d make gumbo.

For a more everyday cornbread topping it would probably be Cuban black beans.

Black eyed peas and collard greens with lots of porky goodness also wouldn’t suck.

Amounts approximated because the dear girl (daughter) tries, but she was trained by the Cooking Channel while I watched others, like me mum, who knew what they were doing. I earned the right to yell at my TV.

Oh, I just know what it’s supposed to look like from watching Granny and the aunts. And my Daddy wasn’t too slouchy in the kitchen. Cornbread filled a bunch of tummies in our large brood.:slight_smile:
