Got me a jug of artisanal local buttermilk from th’ hippies today, and I want to make a pan of cornbread (as well as sipping a cold glass with a sprinkle of salt on top).
Little Banjo is home for a week from college, and I’m wondering what to make as a main dish to accompany it. I usually do Soup Beans (aka Hobo Beans) — pintos cooked with onion and a slice of smoked ham. But I want something more special.
Spare ribs or fried foods seem too fatty to serve with hot buttered cornbread. What do you suggest?
Is there anything that cornbread doesn’t go with? I love having it with breakfast but if nothing else, make a nice bowl of soup and put some chucks of cornbread on the side.
If I didn’t care about fat (usually, I don’t) I would serve cornbread with fried chicken or fish filets, stewed (with a chunk of fatback) pintos or black-eyed peas, and simmered (with a chunk of fatback) greens.
I can’t picture sitting around a good bowl of red in San Antonio and eating cornbread with it.
If fried fish is out, maybe some black bean soup? My wife makes a killer soup with dried and canned tomatoes added, and corn bread is the default side with it.
