Ahem, to the question: Once while on a camping trip, food ran short, a plump Castor canadensis revealed himself and a .270 Winchester round was put to use.
Beaver (that kind) is unbelievably tough. They use their muscles doing all that dam building, and they are hard.
The flavor wasn’t bad. You wouldn’t call it “like chicken”, though.
My best advice, forget about tasting that type of beaver, and try to shoot a turtle or catch a fish if you need some supper while in the wilderness.
I’m having to physically restrain myself from making a horrifically tasteless joke.

I can say I’ve eaten much better than wild beaver. It doesn’t top my list of wild meat I would choose to eat.
A lot like Bald Eagle actually.
But not at all like Spotted Owl.
Dodo was the best, but there’s not much left in the freezer.
