To me it tastes sort of like squirrel. I think it is pretty good but like a lot of smaller animals, it is best if parboiled a bit first. The tail is the best. If you roast it right, it is wonderful.
Caged or free-range?
Oh, wait, you said wild beaver. I thought you meant the farm-raised domesticated beaver. I’ll read more closely next time.
It does taste similar to chili rabbit, at that…
…but I will say that I prefer farm-raised, as I find they are much more meaty.

Nice to see that nobody’s lodged a dam complaint.
Mangetout!
Shame on you!
Wow. People sure have been restrained on this one…
The taste changes considerably about a half hour after the bars close.
Don’t ask.
Lewis and Clark’s crew considered beaver tale a delicacy…
It’s kinda like a cross between a California Condor, and a Baby Harp Seal.
Tail is in fact a delicacy. Wild beaver tastes like fresh ripe melons.
It’s one of my favorite tastes, but I’m always either hungry or sleepy afterwards. I love it when the beaver is so wild it just won’t hold still and you have to struggle to keep your mouth on it.

Dammit, I wish you’d made the joke. I was betting there would be a bad joke within the first 5 responses. You and your self restraint…
I’ve never personally had one, but I hear the taste can be affected by what the beaver has ingested recently.
WHOA!
I know someone who went to Oregon State College, I can ask them

This is not what I opened this thread for!!!
Well, if anyone would know how to serve beaver, surely it would be Betty Crocker.
