Well, excuse the heck outta me for being late!
I expect beaver probably tastes like rabbit (which I’ve eaten) though some websites describe as being like muskrat (which I’ve not). It might be worth checking out, but I’m all city-fied from living in Montreal and I can’t remember the last time I actually saw a beaver, except on a nickel.
During a casual google for “beaver meat”, I uncovered recipes (including this one from the Alaska Department of Fish and Game) and a probably apocryphal story about Catholics asking if they could eat beaver on Fridays, using the animal’s scaly tail as a means to rationalize that it was a fish, and therefore okay.

Unbelievable…I never thought I would be able to respond to someone asking this. I shall surely hateth myself come the dawn for sharing this… :smack:
We were living in central British Columbia and we had to get rid of a beaver damn in a small lake… I’ll spare you the details.
The tail is all fat…roll it in in foil with some rock salt and put it in the fire and it comes out tasting like, well, hot, salty fat. Sort of a cross between bacon cracklings and…um… crisco.
The meat was more like eating dirty socks. Wasn’t a pleasant experience. Maybe because the poor bugger was old and tough…maybe a nice young beaver would have… shaking head
Muskrat tastes much better… more of a fishy taste.
