What goes with balsamic vinegar?

So I have this recipe I like, balsamic chicken. Put some chicken, mushrooms, and balsamic vinegar into a crock pot and let it go.

I’ve been looking at ways to play around with the recipe. So what else could I put in there that would help it? Onions I’m thinking, but I’m kinda drawing a blank on what other things taste like cooked in balsamic vinegar.

I was wondering if maybe I could put in a little bit of brown sugar to sweeten it, how would that go?

Olive oil, and plenty of it to keep the chicken moist.

Dijon mustard.

I use it as a marinade along with Worcestershire sauce and lemon juice for Mahi-Mahi. It would probably taste good with any light fish.

Dammit, I forgot, it also has pears in it. But I’m open to juggling ingredients around.

Hmm, I guess I should note that this is a Weight Watcher’s recipe, and I’m on Weight Watchers, so I would prefer to avoid adding a bunch of calories to it.

I generally add a bit more pears, and a lot more mushrooms, than the recipe calls for.

Agree with the previous ideas. Maybe add some garlic or shallots?

A balsamic vinegar reduction goes well with grilled asparagus.

Spinach goes really well with balsamic. One of my favorite salads in the world is raw spinach with balsamic and olive oil. I wouldn’t cook the spinach in the balsamic, though. Cook the spinach separately (or leave it raw) and then add the balsamic as a sauce/dressing once the chicken is done.

Other leafy greens could be used as well. Brussels sprouts would be great. I’ll second the recommendation for asparagus. (But again, cook all these separately and use the balsamic sauce to flavor them.)

Beets can go nicely with balsamic, especially if you’re looking at things like onions and brown sugar that will make the sauce more sweet.

Red wine has many of the same flavors as balsamic, and they complement each other well in sauces like this.

Rosemary might add some nice flavors. You could also play with sage and thyme.

And I don’t know how the original recipe doesn’t call for garlic. Criminal!

I concur, this is freakin’ awesome!! Especially if you leave it sit for awhile and the strawberry juice and balsamic vinegar get nice and married.

Balsamic vinegar is good with fruit - leave out the mushrooms and add apricots
