This is probably best suited for Cafe Society, rather than GQ, but I’d love to find a breakdown myself, so that I can go about reproducing something similar.
I’d love to have that texture of “meat” in my burritos/tacos & enchiladas at home! I’m sure if a large percentage of it is grain, I could come up with a much healthier version than I’m making currently.
The meatloaf we make at home is at least 50% bulger wheat, and it makes a much better loaf than our previous all meat versions.
