Something my father “created” years ago in the kitchen from scraps, now become a family favorite. He gave it an awful title based on our last name, and I want to know what the “proper” name for the dish is:
Dice up chicken, and sautee it with diced tomatoes (little bit of the sauce in the can, but most of it drained), plenty of olive oil, oregano and pepper to taste. The resulting sauce is basically a tomato flavored olive oil and the chunks of diced tomato. Serve over penne (or really any pasta, but penne holds it all well).
