I’d go with a pundt cake.
Was thinking the same exact thing – but use the authentic recipe with cocoa powder and a half-cup of red food coloring. Yep, a half-cup – the batter should resemble glossy nail polish. Cream cheese icing (with crushed pecans mixed in) is the perfect finish.
Too many people make Red Velvet as simply a yellow cake with some drips of red food coloring. Don’t be one of those people ![]()

Currently I’m searching for something that uses cake flour and buttermilk.
Just knudeling with bacon here, but I love pineapple upside down cake and think it’s flavor and construction would lend particularly well to the incorporation of crispy bacon… ooo, and Macadamia Nuts.
I know! You’d definitely have to build it on-site.
I have a chocolate buttermilk pound cake recipie which I stole from my second husband. It’s nice - made in a bundt pan - has a very tender crumb. And it calls for cake flour. I can look for it later if you’d like the recipe.
Maybe a doberge with alternating dark chocolate and red velvet layers? Frost it, then take some coconut and green food coloring to make “astroturf.” Then maybe lay out a miniature gridiron, blah blah blah.

Emeril’s buttermilk and cake flour, pineapple upside down cake.
Pre-fry hickory smoked bacon strips to just this side of crispy. Layer the bacon strips with the butter, chopped macadamia nuts, and brown sugar, lay down the pineapple and cherry after. Pour batter and bake.
Back in the day, my Mom used to make a Pineapple Cake with Cream Cheese Frosting for these kind of get togethers. Haven’t had it in years, but it is probably my number one favorite cake. Very simple, very distinctive, very delicious. Usually made with walnuts and a couple of cans of crushed pineapple minus the ginger. Kind of a '80’s convenience take on carrot cake. Sometimes carrots showed up as an addition to this cake. The difference was that my Mom made hers with a natural starter … Sourdough growth… she called it Herman.
Herman was a living culture. A special local yeast. Probably the number one secret to baking.
