Long ago I bought a bottle of red vermouth by mistake. Shortly thereafter, I tried to make a martini with it, thinking it would lend the finished product a bright, cheery, red color, but it was more of an ugly muddy brown. So what do bartenders use red vermouth for?
I don’t know about bartenders, but I use it to make spiced wine.
1.5 liters of Burgundy
1 bottle sweet red vermoouth
peel of one orange (just the orange part, not the rind. I use a potato peeler)
cloves, cinnamon sticks, sugar to taste.
Bring to boil, and steep for a short time, till it smells really good.
Serve hot, or over ice.
Manhattans.
Two shots of brandy (or bourbon), one shot of vermouth, add bitters.
Enjoy the first one. You will retain no memory of any subsequent.
Regards,
Shodan

Basically you mix sweet with dark colored whiskies, dry (light colored) with the whites (gin, vodka, etc) and can use either in a scotchbased (rob roy, sweet or dry) cocktail.Dealers choice.
