I’m not sure what you’re saying. The long eggs appear to be simply hard-boiled or hard-cooked eggs in a different form. If you consider a hardboiled egg is an “egg dish” than yes, this is an egg dish as well.
Please look at how they are actually made. They are not simply eggs that have been stretch out or reshaped. The parts have been separated and reformed to fit a mold. In fact, the article itself calls it a “sophisticated Danish dish”.
I have no problem considering them a different topology of a hardboiled egg.
Call it whatever one likes, as long as I don’t have to peel it.
