(Question: In that stupid old SNL bit with the guys at the gyros place who go over and over “You like da saaaauce, mmm?” - is the sauce in question tzatziki?)

If you do this, keep the salmon preparation simple: light brush of olive oil, salt and pepper, roast or grill until firm and just flake-able. Maybe sear it first, give it a bit of a crust; the crunchy texture goes very nicely with the creamy yogurt.

Ming Tsai has a recipe where he dusts the salmon with fennel prior to searing, and it’s quite tasty, but also unnecessary, IMO.
