I’m fond of mango pudding. This recipe says coconut milk, but I use coconut cream anyway 'cos it’s yummier and I’m just a rebel like that.
…this might be a hard recipe to pull off: you have to be able to find Taro Leaves! But Palusami is heavenly: a treat in our household that we only have a few times a year.
The Coconut Cream doesn’t have to be light!
Here are a few more recipe’s from Samoa: as the boards only Samoan-Kiwi (as far as I’m aware!) I have to promote some Samoan dishes!
I have never heard of coconut cream, but now I want some desperately. I love mango pudding.
Use when making coleslaw instead of mayo. I use half mayo and half coconut cream, white vinegar and sugar.

I use it to flavor Kokoda, a type of Ceviche I had in Fiji.

4 ounces pineapple juice
2 ounces rum
1 ounce OJ
1 ounce coconut cream
Shake together, pour over ice, and sprinkle with nutmeg.
