what to do with a can of coconut cream

I accidentally bought a can of coconut cream, thinking it was coconut milk. :smack:

I used a tiny bit for curry, but there’s still a lot left. Anyone got any good recipes?

I’m fond of mango pudding. This recipe says coconut milk, but I use coconut cream anyway 'cos it’s yummier and I’m just a rebel like that.

…this might be a hard recipe to pull off: you have to be able to find Taro Leaves! But Palusami is heavenly: a treat in our household that we only have a few times a year.

The Coconut Cream doesn’t have to be light!

Here are a few more recipe’s from Samoa: as the boards only Samoan-Kiwi (as far as I’m aware!) I have to promote some Samoan dishes!

I have never heard of coconut cream, but now I want some desperately. I love mango pudding.

Use when making coleslaw instead of mayo. I use half mayo and half coconut cream, white vinegar and sugar.

These sound wonderful! Now I want to go to Samoa!

Thanks for the ideas guys. The pudding sounds the most doable at the moment.

Pina coladas!
Works well for sorbet too, with lime and lime zest

I use it to flavor Kokoda, a type of Ceviche I had in Fiji.

Painkillers!

4 ounces pineapple juice
2 ounces rum
1 ounce OJ
1 ounce coconut cream

Shake together, pour over ice, and sprinkle with nutmeg.
