What to do with a load of chestnuts?

I’ve never really cooked with chestnuts, but I just found a really good source for them; being quite into foraging, I couldn’t resist grabbing a few kilos. I’ve tried roasting them by the fire as a kid, but nothing else, and we don’t have an open fire here- so does anyone have any ideas what to do with them? :confused:

I’m basically vegetarian, so veggie suggestions would be especially appreciated!

Put 'em in bed with the captain’s daughter?

Sadly, it’s not early in the morning, and I don’t know any captain’s daughters who would be happy with the arrangement.

Make pasta!

This recipe has pancetta in it, but I think you could skip or sub. We used fresh and not bottled chestnuts.

Ooh, thanks- I do have a massive amount of sage growing as well, I’ll give those a go!

Just not sure if I’m up to trying to forage mushrooms too…

If you inconceivably get tired of eating fresh roasted hot chestnuts, and you don’t mind putting in some time and effort to produce an actually quite simple but staggeringly delicious and impressive confection, there’s always marrons glaces.

I’m a fan of Mont Blanc, though my wife finds it a bit too sweet. I’ve never tried making it with fresh chestnuts, though.
