What to do with cooked rice (casserole w/o cream-of-mushroom?)

Mmmm. Thanks! These all sound so good! Rice will be on the menu tonight! I’m particularly interested in those rice cakes, as I’ve never done anything like that before, but it depends on how much time I have – but I cook rice pretty frequently so I’m pretty sure we’ll have a chance to try everything that was suggested.

For those who suggested rice pudding – I love rice pudding, but I was under the vague impression that you actually should cook the rice in milk/cream to begin with instead of water to maximize creamy goodness; it’s still good using rice that was cooked in water?

I usually load up on the Parmesan, as more is always better with this stuff. You can probably cut out the mixed in bread crumbs if you do this, as only two binders are really necessary, and just coat the cakes with some panko for frying.

Heat it up, add a little bit of butter, sugar, and milk. All the leftover rice in my house gets eaten that way for dessert/snack.
